Kourambiethes / Greek Powdered Cookies
1 lb whipped unsalted butter
2 egg yolks
2 tbsp scotch or cognac
1/2 cup powdered sugar plus plenty to coat
1/2 cup toasted slivered almonds
1 tbsp baking powder
4 cups cake flour
Preheat oven to 350 – 375
Whip butter in mixer for about 5 minutes. Add 1/2 cup powdered sugar and mix for another 5 minutes. Add egg yolks and cognac and mix for another 5 minutes. Chop the slivered almonds a bit more and add them to the mix. Add the baking powder and slowly encorporate the flour to form a dough.
Make golf ball sized cookies in various shapes (circles, half moons, stars) and place onto a cookie sheet. Bake for 20-25 minutes or until golden in color.
Lay out wax paper and sprinkle liberally with powdered sugar. Transfer the cookies onto the powdered sheets while still warm and sprinkle liberally with more powdered sugar.
